In this lunch menu we have an one pot meal, vegetable rice with raita, chips, pakora & sweets, the later three are store brought. This is a very simple and delicious meal prepared within 30 to 45 minutes. Mostly my weekends are like this only ….it’s a finest way of using the leftover vegetables….no fuss easy to make with less oil & even I don’t need Basmati rice or any special spices for flavor.
TO PREPARE VEGETABLE RICE….wash & soak 1 cup of normal cooking rice (I use Thanjavur ponni rice) for half an hour.
Cut the vegetables like carrot, beans, potato, tomato,green bell pepper, green peas, cauliflower, Beetroot, mushroom, baby corn etc. Adding too much of Beetroot may change the color of the rice. Cut Vegetables shouldn’t exceed one or one & a half cup. slice the onions(2 nos.)lengthwise.
TO MAKE GREEN PASTE – Grind together 1 1/2 cup of fresh mint leaves, 6 to 8 black peppercorns, 1 or 2 green chillies with a pinch of turmeric powder to avoid the change of color& keep aside.
In a pestle & mortar, prepare a coarsely ground masala by grinding 1/2 teaspoon of fennel seeds/saunf , 3 to 4 cloves, a cinnamon stick & a green cardamom.
Heat a thick bottomed deep pan or pressure cooker & add 2 tablespoons of any vegetable oil. Then add Bay leaf, coarsely ground masala powder and add sliced onions and ginger garlic paste. Once the raw smell goes add all the vegetables & sauté for 3 to 5 minutes at medium flame.To this add 1/2 teaspoon red chilli powder, 1 tablespoon of coriander powder & 1/2 teaspoon of roasted jeera powder. Now add the green paste & boil it for 5 minutes. Then add 1/2 cup of beaten thick yogurt. Mix well. Drain out the water & add soaked rice & 1 1/2 cup of water. Water ratio should be 1:1 1/2. Add salt as required. After one whistle keep the flame at low for 7 minutes and then switch it off. Or else keep the flame at low for 1o minutes & switch off . Let it cool for 15 to 20 minutes & then open the lid. Add 1/2 teaspoon of lemon juice & Stir gently & serve hot with your favorite raita & chips. The easiest way is to make this in an electric cooker.
