In this menu, we have tawa/plain paratha & white kurma with an unique taste of almond & onion, a rare but superb combo. Good thing is no oil is involved in the preparation. This is a less spicy one and can also be taken with appam and rice noodles/idiyappam/string hoppers.Best for kids.
TO PREPARE WHITE KURMA- cut the vegetables like carrot & potato into small cubes, Beans and baby corn into 1/2 inch pieces. Thaw green peas & sweet corn kernels & keep aside.Boil an onion & 10 pieces of almonds together, remove the almond skin and grind them into a fine white paste & keep aside.
In a deep pan / kadai add all the vegetables and boil it for 5 to 7 minutes. While boiling itself add 1 or 2 split green chilies & a stick of cinnamon, curry patha, 3 gloves and a green cardamom. So that the vegetables are getting boiled with the spice flavor. Add 1/4 teaspoon of coriander powder & roasted Jeera powder.Once the vegetables are done add the ground almond & onion mixture. Adjust salt & allow it to boil for 2 minutes and then add 1/2 cup of thick coconut milk & curry leaves & stir continuously.After 2 minutes switch off the flame.No oil white kurma is ready.
