This lunch idea has lush green Lacha parathas with dry mixed veg curry…..a complete veg meal. Lacha parathas are our favourite & if it’s palak paratha then nothing more is needed for me to fulfill the green craving. Already I’ve posted how to prepare palak roti & puri and follow the same way to prepare this. I assure you this is the tastiest….healthiest ….parathas ever.Asusual end up the meal with buttermilk, plain or spiced.
TO PREPARE MIXED VEG CURRY ……rinse well and chop the vegetables like carrot, cabbage (white or purple), beans, baby corn, potatoes, cauliflower, broccoli (I’m not a great fan so I use a little), all color bell peppers, green peas, sweet corn kernels and if you like paneer then add a little. You can skip or add any vegetable of your choice and availability. Finely chop the onions. Usually I don’t prefer adding tomatoes to this curry.
Heat a thick bottomed pan or kadai,add a tablespoon of olive oil or any vegetable oil and splutter some cumin seeds/ jeera . Then add chopped onions, a tablespoon of ginger garlic paste and fry well. Then add some fresh mint leaves and then all the vegetables. Give it a fine stir and sauté for two minutes. Keep the flame low. Now it’s time to add spices like red chilli powder, coriander powder,roasted jeera powder and Garam masala powder. Add salt to taste. No need to add water if needed sprinkle some. Finally add cubed or crumbled paneer and after stirring a while switch off the flame. If you like lemon flavour then add 1/4 teaspoon of lemon zest or 1/2 tablespoon of lemon juice.
To make it as gravy while boiling itself add some water & finally add 1/2 cup of thick coconut milk. For gravy you can add finely chopped tomatoes while sautéing onion.
This curry is multipurpose and can be used as filling for bread sandwich or tortilla roll or veg puffs/ pockets. And can be refrigerated for almost a week.
