Potato pancakes-Eggless


Potato pancakes or latkes are shallow-fried pancakes of grated or ground potato, flour and egg, often flavored with grated garlic or onion and seasoning. But I’ve prepared eggless as it makes not much of a difference.
I’ve tried potato pancake (Latke) ….which is a traditional cuisine in many European & middle eastern countries.
This is a simply modified version to suit our taste buds. It has a very unique taste and flavor.

⚡️Potato(large) – 2
⚡️White onion – 1/2
⚡️Green onions – 2 sprigs
(Spring onion)
⚡️Garlic -3 pods
⚡️Green chilli -1(optional)
⚡️All purpose flour -2 tablespoons
⚡️Ground Pepper- 1/2 teaspoon
⚡️Salt as required
⚡️Baking powder a pinch
⚡️Oil for shallow frying

-Peel & wash the potatoes till the starch has gone. In a food processor add the cubed potatoes, onion ( I used the white part of spring onions), garlic  and minced well.

-You can also grate potatoes & onions. If you are grating the potatoes then wash it well & squeeze out the water before mixing. Mix it in a bowl with all purpose flour, finely chopped green onions, salt , pepper & baking powder.

-To give a Desi touch I’ve minced the green chilli & added. You can also add finely chopped jalapeños.

-Make it as a batter of thick consistency. No need to add water.
-In a thick bottomed griddle /frying pan pour some olive oil & shallow fry. To have crispy pancakes make the batter  consistency little watery.
Have it with any condiments like sour cream, apple sauce Or tomato ketchup.
Try this definitely. Simple and one more pancakes on your breakfast list.
