DATES AND NUTS LADOO /SWEET DUMPLINGS
Dates and nuts Ladoo / sweet dumplings are highly nutritious, sugar free, fat free and so …..guilt free too. No cooking is involved and serves as a great dessert and after school snacks for kids. As I told in my previous post that to the most I try to make my snacks healthy and this is one among them. Simple easy to make ladoos and that too nutrient rich is really a boon to satisfy my sweet cravings……most of the time. I used to store dates paste in my refrigerator and so it’s easier for me to prepare in a jiffy.

- Dates paste – 1/2 cup
- Mixed nuts – 1 cup
- cardamom powder – 1/4 teaspoon
- clarified butter/ ghee – 1 or 2 tablespoon
– Dates paste are readily available nowadays. If not then soak 15 to 20 dates in warm water for almost 30 minutes. Drain the water completely and remove the seeds if any. Grind it in the food processor or blender into a fine paste and keep aside.
-For mixed nuts, add equal quantity of pistachios, almonds, walnuts,cashew nut and raisins. I’ve added 1 1/2 tablespoons of each nuts. Dry roast them in medium flame except raisins. Allow it to cool and grind them into a coarse powder using blender/mixer/food processor.
-Finely chop the raisins.
– In a mixing bowl, add the dates paste, dry nuts powder , chopped raisins and cardamom powder and mix well.
-Apply ghee or clarified butter on the palms and make this into lemon sized dumplings. Up to 2 to 3 days you can keep outside & then refrigerate. If you want then dip the dumplings into a bowl of desiccated coconut and serve.
