MILLET AND OATS UTHAPPAM 

Millet and oats uthappam is an instant savory pancakes and a good alternate from the usual uthappams.Oats are considered safe for those with a gluten allergy and easier for most people to digest. It’s a healthy breakfast option and can be prepared in a jiffy with the ingredients available at home. As I’m always inclined to vegetables, I’ve added green bell pepper and carrot…..for the sake of color combination. You can also add any color bell peppers, shredded cabbage or even grated zucchini. For me cooking is always my comfort. I know the taste of my kid so I tried to infuse those vegetables in whatever I prepare. He likes carrot and capsicum but not a great fan of millet…..so I combine 2 likes with 1 dislike and prepared his favourite pancakes/uthappam……and that’s the way to make them healthy and happy.

INGREDIENTS 

🔸1 cup powdered quick cooking oats  

🔸1/2 cup foxtail millet flour/Thinai  

🔸 1/2 cup yogurt

🔸 Finely chopped onion -1  

🔸 2 tablespoons of each, finely chopped carrot and capsicum  

🔸 Finely chopped green chilli -1

🔸 1/2 tablespoon of grated ginger

🔸 2 tablespoons of chopped coriander leaves

🔸 salt and pepper for seasoning

🔸 1/4 teaspoon hing/asafoetida 

METHOD 

– In a bowl, mix powdered oats and foxtail millet flour(can be replaced by any millet flour or gluten free flour). To this add salt and pepper, hing, finely chopped ginger and green chilli ,if you don’t want green chilli then add 1/2 tablespoon of red chilli powder and a pinch of turmeric powder. Whisk well with yogurt and water to make it into pouring consistency. Allow it to rest for minimum 15 to 20 minutes.

– In the meantime, finely chop the onions and vegetables of your choice. After 15 minutes of resting add the vegetables and give it a fine stir.  

– Heat tawa or griddle at medium flame. Pour the batter and make it into small sized uthappams / pancakes…..spread some oil on top, close it with the lid and after 2 minutes flip it to the other side.  

-Serve these healthy…..sumptuous…. soft uthappams with sambar/ any spicy chutneys.
