SEMOLINA CHEESE BALLS

Semolina cheese balls are simple ,shallow fried, guilt free and gluten free delicacy and best as starters or snacks. For deep frying I always had an alternate …….shallow fry the cheese balls in the Aebleskiver /Appe / paniyaram pan like I did it in one of my previous post ( Thai fried sweet potato balls) & it works well. You can prepare the base in advance and store it in the fridge for even 3 days  before the party/ get together.

INGREDIENTS  

 ⚡️ 1/2 cup Semolina/ sooji/ Rava    

⚡️ 2 tablespoons of corn flour  

⚡️  Finely chopped onion ,1 small size  

⚡️  1/4 cup of tomato purée

 ⚡️ 1/2 tablespoon of grated ginger  

 ⚡️ 1/2 teaspoon Red chilli powder  

⚡️ 1/4 teaspoon Garam masala powder    

⚡️  Salt and pepper for seasoning    

⚡️ 1/2 cup of grated mozzarella/ processed cheese, For stuffing

⚡️ Any vegetable oil, for shallow frying

METHOD

Get ready with the mise en place.

-Then switch on the flame , heat a deep pan/ kadai and pour some oil and add ginger & onions. Sauté well till it becomes translucent.  

-Now add tomato purée , stir well for 2 minutes & then add red chilli powder, turmeric powder and Garam masala powder. Fry well until the raw smell goes off.

– It’s time to add 1 cup of water, salt and pepper. Once it started boiling add the semolina and keep the flame low. Stir well to avoid lumps. It’s cooked within 2 to 3 minutes. Once it’s done , allow it to cool and store  it in the fridge. To adjust the consistency of the base , if needed you can add corn starch. Otherwise skip that.  

-Once it’s cool, scoop it into small balls and make a small dent in the middle, fill it up with 1/2 a teaspoon of cheese and roll it well into the bread crumbs and keep aside.

– Heat the Aebleskiver / paniyaram pan at medium or low flame and shallow fry the balls….by keep on turning them gently to help them fry even.

– Serve it with any dip/ ketchup . I’m pretty sure you’re going to love this soft textured snack.

I’m going to confess the truth of getting this idea of semolina cheese balls. First time I tried it with the leftover rava upma which my son hates to the core. To make him eat, I’ve modified that upma into cheese balls and it became his favourite…….which he found out the sectret finally.
