PEARL MILLET / KAMBU/ BAJRA DOSA
Pearl millets are good old traditional grain which is rich in protein, minerals and has many health benefits. India is the largest producer of pearl millet. Bajra rotis are very commonly made and in the southern part of India Kambu idli and dosa are very common. As I’ve already mentioned we are crazy lovers of dosa, almost using all the millet varieties I’ve prepared dosa.

🏵 1 cup of Pearl millet/ Kambu / Bajra
🏵 1 cup of idli rice
🏵 1/2 cup of whole white urad dal
🏵 1/2 teaspoon fenugreek
🏵 Salt as per taste
– Wash and soak the millet, rice and dal seperately for minimum 3 to 4 hours. Grind them well in a blender / mixer. Add salt , mix well and allow it to ferment overnight or 7 to 8 hours.
– Heat a thick bottomed tawa / griddle and make dosas. Close it with a lid for 2 minutes in medium flame and then flit it to the other side.
– Crispy Kambu dosa is ready to serve with spicy mint and tomato chutney. One more millet dosa is added to your breakfast/ dinner menu.
