Paneer stuffed paratha

Parathas are very comfort all in one meal. A little time consuming is the stuffing part but a fulfilling meal on its own, with a dollop of butter on top ……heavenly!! Though health conscious I wanted to have butter on top of parathas, otherwise it loses its charm. The horizon for stuffing is so wide & infinite, it’s up to your imagination.I’ve tried many varieties of stuffed parathas which will be revealed soon.
The most favourite is Paneer stuffed parathas ….next to aloo parathas.

⚜whole wheat flour -1 cup
⚜paneer/ cottage cheese , crumbled – 1 cup
⚜onion, finely chopped -1 medium size
⚜green bell pepper or capsicum , finely chopped -3 tablespoon
⚜ginger, finely grated – 1/2 tablespoon
⚜green chilli, finely chopped – 1
⚜jeera & coriander powder – 1/2 teaspoon
⚜red chilli powder -1/2 teaspoon ( optional)
⚜turmeric powder – 1/4 teaspoon
⚜chat masala- 1/4 teaspoon
⚜finely chopped coriander leaves – 1/2 tablespoon
⚜salt as per taste
⚜any vegetable oil -5 tablespoon
– To knead the dough, in a mixing bowl add whole wheat flour, salt a pinch, one tablespoon of oil & water and mix well . Cover the dough with a damp cloth & rest it for minimum half an hour.
– Meanwhile, prepare the stuffing by mixing all the other ingredients mentioned above except the flour and oil.
– Now divide the dough into 5 equal parts. Roll it a little and make it like a bowl and put the stuffing inside the dent and cover it . Dust this well with the flour & roll it again into slightly thicker parathas.
– Heat a griddle or tawa and cook the parathas in medium flame . Serve hot with a dollop of butter, yogurt and pickle.
