Whole wheat & mixed nuts pancake (eggless)


Nowadays it’s the pancake recipe that’s gone viral worldwide. A pancake without egg is the rarest pick, here comes one which has the goodness of mixed nuts and whole wheat. I care more about breakfasts as it’s the meal of the day …..energy booster, so moms make it more healthier &simpler. Eggless pancakes doused with maple syrup is heavenly!!

๐Ÿตย Whole wheat flour -1 cup

๐ŸตFinely chopped mixed nuts -1/2 cup

๐ŸตMilk/ Almond milk – 1/2 cup

๐ŸตDemerara sugar/ jaggery /coconut sugar -3 tablespoons

๐ŸตBaking powder -1/4 teaspoon

๐ŸตFreshly Grated coconut – 2 tablespoon (optional) If you’re using coconut sugar then skip this.

๐ŸตSalt, a pinch

๐Ÿตย cardamom powder -1/4 teaspoon


– Finely chop the mixed nuts of your choice and availability. I’ve used almonds, cashew, pista, walnut and raisins. Keep it aside.ย 

– In a mixing bowl, mix all the dry ingredients then add milk and whisk well. If required add enough water and then add mixed nuts. Adjust the consistency.

Heat a griddle or tawa , put some butter and pour the batter into pancakes , allow it to cook for 2 mins and then flip it. Serve hot with maple syrup.
