BEETROOT CHEESE PATTIES
Patties are always a welcoming snack in my family, either it’s shallow fried or baked. It became an inevitable snack and a crowd pleaser among the friends and guests. So I tried various versions with different vegetables & stuffings. This time I tried it with beet & to please my kid I’ve stuffed it with mozzarella cheese cubes, so as usual it became a hit with the goodness of beet😀😁.
This time I shallow fried the patties in olive oil & I didn’t bake as I thought the mixture is so soft & tender it might take a little extra time to bake but the cheese cannot hold that much time. Easy veg infused snack.
INGREDIENTS
⚡️Medium size potatoes, boiled & peeled – 3 nos.
⚡️Beetroot, steam boiled – 1 medium size
⚡️Mozzarella cheese – 1/2 cup, mini cubes
⚡️Ginger garlic & green chilli paste – 1 1/2tablespoon
⚡️Red chilli powder – 1/2 teaspoon
⚡️coriander powder -1/2 teaspoon
⚡️Chat masala -1/2 teaspoon
⚡️bread crumbs -1/2 cup
⚡️corn starch -1/4 cup
⚡️Vegetable oil for frying

METHOD
Boil & mash the potatoes. Steam boil & grate the beet. Except oil & cheese , mix all the ingredients together. If you feel that the mixture is watery then add corn starch or bread crumbs to make it as a chapati dough consistency.
Mix a table spoon of corn starch with 1/4 cup of water. Now roll a tablespoon of mixture into a ball & stuff inside a cheese cube & then flatten a little to make patties. Then dip it in the cornstarch mixture , roll it on the bread crumbs & shallow fry it in a medium or low flame.
Serve hot with any dip/ hummus/ ketchup.
