THAI FRIED SWEET POTATO BALLS
I love sweet potatoes which is abundantly nutritious and This is one of my sweet potato versions and it’s a Thai street food. They are mildly sweeter, crispy outside, soft and chewy inside. The added advantage is its gluten free and vegan and also guilt free…. Why because, I prepared it in Aebleskiver pan /kuzhi paniyaram pan & it turned out to be very nice with less oil. Basically it’s a deep fried snack and if you want you can do as per the original.This recipe has been adapted from passionatelykeren.com
INGREDIENTS
🚩Sweet potato , boiled -1 medium size
🚩potato or tapioca starch – 1/2 cup
🚩Rice flour or gluten free plain flour -1 1/2 tablespoon
🚩castor sugar – 3 tablespoons
🚩baking powder -1/2 teaspoon
🚩salt a pinch
🚩1/4 cup of vegetable oil
( 3 to 4 cups of oil if you opt for frying)

METHOD
Boil the sweet potatoes and mash them well. To this add all the ingredients mentioned above except oil.
Roll a tablespoon of mixture into a small ball. Heat the Aebleskiver pan and in each dent pour a teaspoon of oil & put the balls one by one & fry it in medium or slow flame, periodically flipping the balls so that it could evenly fry. After 3 to 4 minutes or once the balls became golden brown take out and drain on paper towels.
For deep frying, heat the vegetable oil in a deep frying pan on medium or low heat & then fry the balls until golden brown.
It’s a healthy and a different snack for everyone & I hope kids would love it.
